One pot chickpea and spinach winter warmer

Homemade with Helen is a series that will be released every month with a new homemade recipe that everyone can make! 

The recipe this month is:  One pot chickpea and spinach winter warmer

This recipe is a great warming dish perfect for 2 people or even a family! It can be made quickly on the stove or can be made throughout the day in a hotpot if the dish needs to be served at different times. You can add as many vegetables as you want and can be tailored to suit your favourite ingredients.

Ingredients needed:

1 tablespoon olive oil/vegetable oil

1 small onion 

1-2 cloves of garlic 

250 mil vegetable stock/stock cube

1 400g tin chopped tomatoes 

I 400g tin chickpeas (rinsed and drained)

2 medium potatoes (peeled and sliced)

Handful of cauliflower florets

125g spinach 

Optional topping: 50g grated cheese, handful of cashew nuts. 

 

Instructions: 

Step 1:Dice one small onion and 1-2 cloves of garlic add oil to non- stick pan and soften diced onion and garlic on medium heat for around 5 minutes 

Step 2: Add tin of chopped tomatoes and tin of chickpeas (rinsed and drained)

Step 3: Add sliced potatoes and cauliflower 

Step 4: Add 250 mil vegetable stock

Step 5:Stir in spinach and let the leaves wilt for a few minutes 

 

Step 6: Serve in bowls, optional toppings include grated cheese or cashew nuts

If cooking in a slow cooker rather than a pan on the stove, reduce the amount of stock to around 180 mil and cook for around 4-5 hours depending on the slow cooker setting.
